Beginning of Spring, as the first of the 24 solar terms, signifies the beginning of the transition between the four seasons. This year, Beginning of Spring coincides with the Spring Festival holiday. In the midst the celebrations, it is advisable to maintain a regular routine, and also to increase the intake of fresh vegetables. In many regions of northern China, it is a tradition to eat spring pancakes filled with some pungent vegetables, such as scallions and chives, and meat on the day of Beginning of Spring.
