On December 5th, 2023, in Jinhua City, Zhejiang Province, households in Xutang Village, Yuandong Township, Jindong District were busy making tofu skin. In every home, soy milk was slowly thickening in earthen stoves. Once a film formed on the surface, it was lifted with a bamboo thread, hung in halves on thin ropes, and left to dry.
The tradition of "cooking" tofu skin in Xutang Village has a history of several hundred years, and over seventy percent of the villagers can make tofu skin. The tofu skin made in Xutang Village, using locally grown soybeans and a unique process, is as thin as cicada wings yet tough as tendons, with a delicate and slightly sweet taste, making it highly favored by consumers.
