1. Crack the eggs into a bowl and add in a little warm water;
2. Blend the egg white and yolk into a homogeneous liquid;
3. Once the pan is warm, pour in some cooking oil and a few drops of wine;
4. Add the egg mixture to the frying pan and cook over medium heat;
5. As soon as the eggs begin to solidify, take a wooden spoon or spatula and scrape the eggs from the sides of the pan and fold them over into the middle.
6. About four minutes later, remove the pan from the heat.
